My inspiration for this post was the recent production of Babel London, an interactive theater experience based in a eerie park in North London. I needed a sugar boost, something that would sit in my belly while I braved the cold and wind. This just hit the nail on the head.
Hot Chocolate Cake
Passed on through family & friends
- Preheat the over to 180c and prepare a cake tin
- In a bowl combine 4 large eggs, 75g soft butter, cut into blocks, 2 tbs gluten free flour (or normal flour), 2 tbs sugar and 250g of hot chocolate powder
- Once the mix is smooth pour into the cake tin and cook for 17-22 minutes (check with a skewer to make sure the cake is cooked through)
This is the easiest cake I have made and best of all, minimum washing up to do afterwards. Best served with a luxurious vanilla ice-cream.
