This week’s recipe is dedicated to the Sunday Roast. It’s a particular favourite of mine, something too look forward to during the week. This recipe combines my favourite ingredient – lemons with the delicate flavour of roasted chicken. The freshness of the chilli green beans lifts the whole dish.

  • Pre-heat the oven to 200c
  •  Chop two lemons into quarters
  • Stuff the chicken cavity with four lemon quarters. Then add a bunch of fresh thyme and then add another four lemon quarters. Use the extra skin to close the cavity. If needed, use a cocktail stick for extra security
  • Gently loosen the skin between the breast meat to reveal two pouches. Add a slice of butter to each
  • Season the skin generously with salt and pepper. Place the chicken into an oven dish and any remaining lemons or thyme.
  • Cover with foil and place in the oven on the middle rack
  • Peel and slice the potatoes into halves. Add to a large pan with boiling water for 15 minutes or until almost cooked through
  • Place a baking tray in the oven with 50g of butter and melt, then remove
  • Once the potatoes have been drained season and shake well
  • Add the potatoes to the baking tray and place in the oven for 45 minutes. Turn halfway
  • Thirty minutes before the chicken is ready (in my case after an hour) take the chicken out and check that the juices runs clear
  • Cover with foil and rest the chicken for 20 mins
  • Check on the potatoes and once crispy remove from the oven
  • Meanwhile boil the green beans until cooked. Remove from the pan and on a very low heat add olive oil and chilli flakes. Add the beans back in the pan and cook for a further 5 mins
