Chilli Lime Mince in Lettuce Cups produces a zingy and fresh taste combination. Perfect for light lunches, they are also great as party nibbles.

  • Start by slicing two red peppers into strips about 1cm by 2cm. Chop one red chilli into slices
  • Add rice to a pan with double the amount of boiling water and simmer until the water has evaporated
  • Add red peppers and chillis to a large frying pan with olive oil and saute until soft
  • Add a handful of green beans, trimmed and sliced into thirds to the pan
  • After three minutes add 1/2 cup of boiling water to the frying pan
  • Once the water has evaporated turn down to a medium heat
  • Add the beef mince, taking care to separate the strands lengthways. Follow with seasoning; chilli flakes, olive oil, salt, pepper and stir through
  • Just before serving squeeze 1/2 lime over the mince and stir
  • Fork through the rice and prepare the lettuce leaves on a chopping board/serving plate
  • Add a tablespoon of rice to each lettuce leaf followed by the chilli lime mince
  • Serve with extra lime halves ready to squeeze over the individual lettuce cups for extra zing. Enjoy
